Chicken Enchiladas (High-Protein)

WHAT YOU NEED:

2 Mission Fajita Carb Balance Whole Wheat Tortilla

4 oz Boneless Skinless Chicken Breast

Seasonings

- 1/2 Tbs Low Sodium Taco Seasoning by Old El Paso

- Salt

- Pepper

- Onion & Garlic Powder

- Cayenne Pepper

60g (1 serving) Mild Red Enchilada Sauce by Market Pantry

14g (1/2 serving):

- Fat Free Shredded Cheddar Cheese

- Reduced Fat Shredded Mozzarella Cheese


HOW TO MAKE:

1️. Preheat oven to 400 degrees.

2️. Season your chicken with the listed seasonings above and air fry at 400 degrees for 15-17 minutes, or cook on stove top.

3️. Shred your chicken by pulling it apart with two forks.

**Tip: An electric mixer will shred faster and more finely.

4️. Move chicken to a skillet on medium heat and combine with half of the enchilada sauce and half of the cheese mixture.

5️. Take pan off the heat and place mixture onto both tortillas. Push both sides of the tortilla in, then roll it up completely. (Burrito style)

6️. Place the rolled tortilla in a greased pan with high sides.

7️. Spread the remaining enchilada sauce onto both tortillas, along with the rest of the cheese.

8️. Cover with aluminum foil and bake in oven for 20-25 minutes, or until cheese is melted.

9️. Add your favorite toppings, and then serve!
